Green Smoothies: Drink Up Your Leafy Greens!

Green Smoothie
Green smoothies are great for breakfast or a midafternoon treat.
By Jenny Peterson

Despite my best efforts, and left to my own devices, I don't usually eat my allotment of vegetables every day. I naturally gravitate more toward fruit, even though I do enjoy squashes, broccoli, and greens. Most mornings find me making fruit-based smoothies—a healthy breakfast, but still not helping me with my veggie deficit. I think the people around me got tired of hearing me say how I "really should put some greens" into my smoothies, because last Christmas I was given a sturdy blender! No more excuses; I now had the proper equipment to move forward.

If you're experiencing the same leafy challenge, I invite you to try a green smoothie. I know, it sounds a bit hard-core, doesn't it? That's what foodies and athletes drink, not regular people. Certainly not people who like things to taste good. But I'm here to preach the gospel of the green smoothie! I'm definitely not one to suffer while eating or drinking something unappealing, so trust me, you can do this and it's good. Here's my basic recipe:

Green Smoothie

  • 3/4 cup almond milk
  • 2 handfuls baby spinach
  • 1 whole banana
  • 5 slices cucumber, unpeeled
  • 1 scoop protein powder (I like whey protein best)
  • 2 teaspoons agave nectar
